Almond and Cacao energy balls | Recipe

I recently started trying to live a more healthy lifestyle. I knew if i jumped in a the deep end and tried to go straight into it i would fail so i am slowly starting to change the way i eat and my lifestyle. I am taking inspiration from Deliciously Ella's cookbooks but I'm not cutting out meat just yet. I really wanted to find some sweet treats that were more healthy than a chocolate bar or a packet of crips and Deliciously Ella has so many great recipes in both her books and online. I found this recipe for Almond cacao energy bites and gave it a go but changed it slightly to what i had. To make these you do really need a food processor i have tried previously with blenders etc but it just doesn't work.

You will need:

1 cup Almonds (i used ground almonds)
2 cups pitted Medjool dates - pitted
2 tbsp coconut oil
2.5 tbsp Almond butter
4 tbsp raw Cacao powder
1 tbsp flax seed
1 tbsp chia seeds

Add all of your ingredients into the food processor and blend until a dough forms, it will become very sticky which is when you can start rolling into balls.

Line a plate or tray with baking powder and roll into balls, place in fridge for a few hours and store in a air tight container.

These are super easy and really tasty and are a great pick me up without being to guilty. I think they taste slightly like bounty chocolates, so good!
