SLIMMING WORLD MINCE PIE RECIPE | A SLIMMING WORLD CHRISTMAS


Just because its Christmas and we are following a plan doesn't mean we have to miss out on the nice Christmas treats when following slimming world. If your a lover of mince pies but want to save on the syns this Christmas then you will love this recipe.

The recipe make 32 so these are smaller than the average mince pie but still fix the craving and are a perfect treat for the mice pie lover. Slimming world is fantastic for tweaking everyday naughty meals/treats and making the Slimming world friendly. The pastry is quite hard to work with so add a little bit more water. The pastry isn't exactly the same as normal pastry and a lacks a little in taste but as soon as you bite the mince you wouldn't know the difference.

Heres what you will need:

225G Plain flour
A pinch of salt
110g butter cut into small cubes
fry light
16 lvl tbsp mincemeat

To make the pastry sift the flour and salt into a bowl. Add the cubed butter and rub together with clean fingertips to form a breadcrumb like consistency. Add cold water to the dough until it is wet enough to form a ball which clean the bowl. Wrap in cling film and chill for 30mins

Preheat oven to 190oc and spray a muffin tin with fry light.

Sprinkle a little flour onto a work surface and roll out the pastry very thin. Using a 7.5cm fluted circle cutter, cut 32 rounds and place into each hole in the tray. Reserve the trimmings and cut 32 stars.

Divide the mince meat between the pastry cases, using about half a tablespoon for each (the mince spreads as it cooks so don't use too much)

Cover the tops with the stars and bake in the oven for 15mins until the pastry is golden and crisp. Leave to cool on a wire rack.

Dust the tops with icing sugar (count 1 syn per teaspoon but a little goes a long way when dusting)
