This week I wanted to share a healthy(ish) Pizza recipes. It definitely a lot healthier than normal pizza as its made using a tortilla wrap. I haven't had pizza for ages and I do miss it and this recipe has definitely satisfied my craving for both pizza and cheese as it does allow a little bit of cheese. The five minute pizza is from my new Hairy dieters cook book 'eat for life' I am a big fan of there cook books and although they aren't skinny mine recipes (as they say) they are still better than normal cooking and fast food.
Ingredients (serves 1)
1 large tortilla wrap ( I used warbourtons thin wrap but a wholemeal tortilla is better)
3 TBSP passata
20g wafer-thin ham
2 pinches of dried oregano
20g half-fat cheddar cheese - grated (mozzarella if you want to be really good)
small handful of rocket
1/2 tsp extra virgin olive oil
1/2 tsp balsamic vinegar (optional)
olives in brine (optional) I used tomatoes as I don't like olives
freshly ground black pepper.
*Preheat grill to hottest setting
*place the tortilla on a baking sheet and spread the passata, leaving a 2cm gap around the edge
*cut the ham into strips and arrange on top of tortilla, add oregano and then the grated cheese
*toss the rocket with the olive oil and vinegar in a bowl
*place the pizza under the grill until the cheese has melted (a couple of minutes) slide the pizza onto a warm plate and top with salad.
*serve and enjoy immediately
