I love baking! I recently got more into cooking and as I'm currently eating clean i haven't baked for ages and i do miss it! I was watching Tanya burr on youtube and she did a video on these triple chocolate cookies HERE and i knew i had to have a go at baking them for myself. As i said I'm currently clean eating and so is my fiance and although i love baking i can't eat the result and in my fiance's office they have a bake off on Fridays and it gave me the perfect opportunity to give this quick, easy recipe a go. we allow ourselves to have a cheat treat once a week so we can have "one" (honestly....just....one) of these each.
You will need:
*200g None salted butter (i use stork liquid)
*300g caster sugar
*1 large free range egg
*275g self raising flour
*75g cocoa powder
*2 large bars of chocolate (milk, white or whatever you fancy)
*Chocolate chips (which i forgot to put in picture)
**Heat oven on 210°C **
First if you have bought solid butter i would recommend taking it out of fridge about half an hour before you start to soften it, along with the egg.
Mix together the melted butter and caster sugar in a large mixing bowl with a whisk until creamy (if using sold butter) but if you use the liquid it will go more into a creamy consistency as below,
Crack the egg into the mixture and whisk for a a few seconds.
Add your flour and cocoa powder to the mixture and fold in with a wooded spoon. Then using a electric whisk, whisk until you have a stiff, thick mixture as below. The mixture needs to be a little sticky so the balls stick together, if too stiff add a drop of milk.
break up the chocolate chunks and add to your mixture i added one type of chocolate then folded it in then added another etc.
Roll the mixture into hand size balls and separate them as best you can, i made them a little too big so they slightly joined and made giant cookies, and place on a lined baking tray and put in the oven to bake for exactly 10mins. If you take cookies out and when you touch them they are squidgy and sink, don't put them back in oven just let them cool for 30mins and they will be perfect.
